Description
Product obtained from fresh pork pancetta trimmed and salted using brine made up of salt, spices and aromas. After salting the product is steamed and lightly smoked so as to give it a natural browning and typical aromaticity. When cut, the stewed pancetta has lean pinkish parts alternating with white streaks of fat. The flavor is sweet aromatic and slightly smoked.
