To prepare sebadas, you mix semolina or flour with water and salt to form a firm dough. This dough is rolled out into thin discs, which are filled with fresh pecorino cheese and then closed like a ravioli or crescent. The sebadas are then fried in hot oil until golden and crispy.

Once fried, the sebadas are drained of excess oil and served hot, dusted with icing sugar and a generous drop of strawberry tree honey or orange honey, typical of Sardinia. The contrast between the sweetness of the honey and the salty flavor of the cheese creates a unique taste experience appreciated by lovers of Sardinian cuisine. Sebadas are often eaten as a dessert after meals or during holidays and special occasions.
