Serving suggestions: cut the bresaola into very thin slices so as to better appreciate its fragrance. It can be offered alone or in the form of a carpaccio seasoned with lemon, a little oil, pepper, parmesan flakes and rocket leaves. It is excellent with Parmiggiano Reggiano. The most suitable wines to accompany the Bresaola della Valtellina are above all the young and light reds, basically acidulous.
